Miss Judy’s Pumpkin Cobbler
Ingredients:
1 can (30 oz.) pumpkin pie filling
1 box yellow cake mix
4 large eggs
1 can (12 oz.) evaporated milk
½ cup (or more) brown sugar
1 cup (2 sticks butter) or margarine (who uses that?) (melted)
Directions:
Preheat oven to 350°
In a large bowl, beat eggs with a whisk, add pumpkin filling and milk and mix together thoroughly. Pour into ungreased 13” x 9’’ pan, sprinkle the dry cake mix on top. Pour the melted butter over the cake mix. (Some will sink in, don’t worry.) Sprinkle liberally with brown sugar. Bake for 55-60 minutes. (Don’t let the brown sugar burn.) Miss Judy checks it at 50 minutes.
