Miss Judy’s Pumpkin Cobbler

Miss Judy’s Pumpkin Cobbler

1 can (30 oz.) pumpkin pie filling

1 box yellow cake mix

4 large eggs

1 can (12 oz.) evaporated milk

½ cup (or more) brown sugar

1 cup (2 sticks butter) or margarine (who uses that?) (melted)

Preheat oven to 350°

In a large bowl, beat eggs with a whisk, add pumpkin filling and milk and mix together thoroughly.  Pour into ungreased 13” x 9’’ pan, sprinkle the dry cake mix on top. Pour the melted butter over the cake mix. (Some will sink in, don’t worry.)  Sprinkle liberally with brown sugar. Bake for 55-60 minutes. (Don’t let the brown sugar burn.) Miss Judy checks it at 50 minutes.

This scrumptious recipe comes from Judy Hoghed of Sharon United Methodist Church in Supply, North Carolina. Your webmaster recently sampled it during a four-day revival and knew that it had to be included in the recipes for Larison’s Corner!  Thank you, Miss Judy!
