Lori’s Potato Salad

Yukon yellow potatoes – 5 lb bag
Duke’s Mayonnaise
Yellow mustard
4 Hard-boiled eggs
Salt and pepper
Sweet salad cubes or relish (optional)

Boil potatoes until soft or consistency you desire (can chop or mash)
Add chopped hard-boiled eggs
Add mayo and mustard to consistency and taste desired
Salt and pepper to taste

Refrigerate and serve cold.
Tastes best the next day.
