Chicken Noodle Soup
From Lori (serves 3-4)
Ingredients
4 boneless chicken breasts
4 quarts chicken broth and/or stock
6 stalks of celery—sliced
6 carrots—sliced
1/2 sweet onion, chopped
Salt, Pepper
Thyme
Basil
Bay leaf
Garlic (optional)
Extra wide egg noodles
Directions
- Boil chicken, cut into small chunks, return to pot
- Add broth/stock to water
- Add celery, carrots and onion
- Add egg noodles
- Add spices to taste
- Boil soup for about 1 hour
Notes
A definite crowd-pleaser, especially a a cold winter’s day! Goes well with a slice or two of homemade toasted, buttered white bread!
