Chicken Noodle Soup

From Lori  (serves 3-4)


4 boneless chicken breasts

4 quarts chicken broth and/or stock

6 stalks of celery—sliced

6 carrots—sliced

1/2 sweet onion, chopped

Salt, Pepper



Bay leaf

Garlic (optional)

Extra wide egg noodles


  • Boil chicken, cut into small chunks, return to pot
  • Add broth/stock to water
  • Add celery, carrots and onion
  • Add egg noodles
  • Add spices to taste
  • Boil soup for about 1 hour


A definite crowd-pleaser, especially a a cold winter’s day! Goes well with a slice or two of homemade toasted, buttered white bread!
