Killer Potato Soup!

That’s a figure of speech, my friends!

Yes, my friends, this is my killer potato soup recipe!  My daughter, Treacy has won prizes for this recipe, and it is one of the biggest sellers for our church soup sale! It is so easy and doubles (or larger) very easily!  The recipe I’m giving you all is for a dutch oven’s worth.  It’ll feed approximately 12 people.  Just remember to still order it from our church though!  Lol!
6 cups of chicken broth (you can use vegetable broth for a vegetarian version)
4-5 cups of diced potatoes
2 tsp. dill weed
Using a dutch oven, bring to boil and cook until potatoes are done (approx 10-15 minutes).
In a large pot, make a rue/paste of-
8 tablespoons of butter
8 tablespoons of flour
Cook until it boils and gets thick.
Add –
4 cups of whole milk
2 tsp. salt
1 tsp. pepper

Using a whisk, stir continuously until mixtures comes to a boil and gets smooth and thick.  (approx 10 min) Turn the burner back so the milk doesn’t burn the bottom of the pot!
Poor milk/butter/flour mixture into chicken broth/potatoes/dill mixture and stir until very well combined. Enjoy!

Sadly, this does not freeze well.  But it’s delicious enough to enjoy for a couple of days!
