- 1¼ lb. salmon cut into “1” cubes
- 1 tbsp lemon mayonnaise
- 2 green onions, chopped
- ¼ cup parsley
- 2tbsp Dijon mustard
- ½ cup panko bread crumbs
- ¾ tsp each, salt and pepper
In a food processor combine salmon, mayonnaise, parsley, Dijon mustard, salt and pepper. Mix leaving salmon in chunks. Add panko and mix thoroughly without breaking up salmon. Using a ice cream scoop form a ball into a patty.
Grill on a hot grill
