Here is a old family favorite:
BRIAN’S APPLE CAKE
This recipe comes from my brother’s kitchen; he used to make it for my birthday.
Ingredients:
4 cups apples, chopped (approximately 5 granny smith apples)
2 cups sugar
1 cup oil
3 cups flour
1 cup Walnuts, chopped
1 cup dark raisins
1-1/2 teaspoons cinnamon
½ teaspoon allspice
2 teaspoons baking soda
1 teaspoon vanilla
1 egg
Pour sugar over apples and mix. Add oil to sugar-apple mixture and soak for 1 hour.

Combine flour, walnuts, raisins, cinnamon, allspice, baking soda, vanilla, and egg. Add the sugar-apple mixture. Pour into a greased and floured tube pan. I use a bundt pan.
Bake in 325° oven for 1-1/4 hours.
Notes: Timing: Up to 1 hour, 30 minutes. I have used up to 6 Granny Smith apples. Don’t soak the raisins.
